Ingredients
- 4 skinless salmon fillets (6 oz each)
- 2 cups fresh spinach
- 1 cup grated Parmesan cheese
- 2 tbsp blackening seasoning
- 2 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet over medium heat, add olive oil and sauté the spinach until wilted. Mix in the Parmesan cheese, salt, and pepper.
- Brush both sides of the salmon fillets with olive oil and coat generously with blackening seasoning.
- Create a pocket in each salmon fillet and stuff it with the spinach-Parmesan mixture.
- Place the stuffed fillets on a parchment-lined baking sheet and bake for 15-20 minutes until cooked through.
- Drizzle fresh lemon juice over the top before serving.
